What's the taste difference between heavy whipping cream and evap milk in an alfredo recipe?

Anyone tried both? I've tried the heavy cream and butter... it just doesn't come out right like i feel it should. I'm wondering if I give evap milk a try will it come out better? How do restaurants make yummy alfredo dishes?
